Batate Bhajun Upkari (Potato Stir Fry)

There are many variations to Batate Upkari. Most of the time when we return back from vacation, rice dalitoy and Batate Upkari is all that everyone looks forward to eating. This one is called the Indian french fries in our house.




Ingredients:

4 large potatoes, peeled and sliced into triangles
1 tsp black mustard seeds
2 dried red chillies, cut into pieces (I use Byadgi)
salt to taste
oil

How it's made:

Rinse potatoes under running water. Drain all water out. Add salt and set aside.




In a "Kadai" or frying pan (non-stick can be used), heat oil. Add mustard seeds. Cover pan with lid to avoid mustard seeds all over. When it splutters, add red chillies. Saute for a minute. Drain any excess water from the potatoes. Add potatoes to the frying pan. Cover and cook on high heat for 4-5 mins, stirring in between. Let the potatoes cook as well as turn light brown and crisp. Serve hot with plain white rice, dalitoy/ rasam, and papad.
